Malossol Cornichons

Malossol is a Russian term meaning "little salt" or "lightly salted" and is most commonly used to describe caviar that is prepared in this manner. The Malossol cornichons are prepared with less salt than Maison Marc's other cornichons, and the emphasis is on the herbs: dill, garlic, bay leaf. Another distinguishing characteristic is the species of gherkin: the ones used for the Malossol cornichons are larger, sweeter, and less crunchy that the varieties used for the smaller cornichons.
